Malibu Farms Sweet Potato Fries with Tahini Sauce

Baked Sweet Potato Fries
Ingredients
Olive or vegetable oil
1 cup pucker up tahini sauce (recipe below)
1 cup crispy garbanzo beans
¼ cup chopped fresh herbs of choice
½ cup pomegranate seeds
4 sweet potatoes or yams: garnet yam, purple yams or Japanese white sweet potatoes
Method
- Preheat the oven to 400 degrees.
- Zebra-peel the skin on our sweet potatoes, leaving a little skin on because it holds the sweet potatoes together, but too much skin can make them chewy.
- With a vegetable peeler, peel the potatoes in lengthwise strips, removing half the skin. Then cut the sweet potatoes into wedges, 4-6 wedges per half potato, depending on how thick you cut them. Place the wedges on a sheet pan that is greased with oil. Do not crowd your pan.
- Bake for 8 minutes or until the underside is browned and crisp. Turn the fries over to brown the other side for about 5 minutes or until cooked through. Remove the sweet potatoes and place on a platter.
- To serve, drizzle with pucker up tahini sauce and crispy garbanzo beans. Garnish with herbs and pomegranate seeds.
Pucker up Tahini Sauce
Ingredients
½ cup tahini (sesame seed paste)
Juice from 1 lemon
¼ cup hot water
1 garlic clove, grated
3 tablespoons olive oil
Salt to taste
1 tablespoon honey, agave, or maple syrup (optional)
Method
1. Spoon the tahini into a small bowl and add the lemon juice. The mixture will seize up and get stiff, so thin it out with the hot water to make a smooth sauce.
2. Add the garlic and olive oil, and season to taste. For a sweeter sauce, stir in the honey, agave, or maple syrup.
