Cranberry Pomegranate Salsa

On Rancho La Puerta’s organic farm, we cultivate squat pomegranates, Granada in Spanish. Their tart, sparkling seeds pair beautifully with pan-cracked cranberries and lime for a refreshing, modern twist on traditional cranberry sauce.

This salsa is vibrant, tangy, and a perfect balance of texture and flavor, ideal for accompanying roasted fish, vegetables, or turkey.

Ingredients

  • 1 cup fresh cranberries
  • ⅔ tablespoon unseasoned rice wine vinegar
  • ¼ cup red onion, diced
  • ¼ cup chopped cilantro leaves
  • ¼ serrano or jalapeño pepper, seeded and minced
  • Seeds from 1 pomegranate
  • Dash of sea salt, to taste
  • 4 tablespoons fresh lime juice, or to taste

Directions

  1. Cook cranberries:
  2. In a small saucepan, cook the cranberries in rice wine vinegar over low heat until their skins pop. Monitor carefully to prevent scorching.
  3. Cool: Remove from heat and let cool completely.
  4. Combine ingredients: In a medium bowl, mix the red onion, cilantro, minced pepper, sea salt, lime juice, and pomegranate seeds.
