Tres Estrellas Brain Boosting Broth

Creating a vegetable broth that promotes brain health involves incorporating ingredients rich in nutrients and compounds that support cognitive function. Here’s a simple and nutritious vegetable broth recipe with brain-boosting ingredients that’s great for soups and stews, cooking grains, and as a healthy scrumptious base for cooking a protein. 

Yields about nine cups.

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 10 dehydrated Shitake mushrooms
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder (or 2 inches of fresh turmeric, sliced)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon black peppercorns
  • 1 cup broccoli florets
  • 1 cup spinach leaves
  • 1 cup kale leaves
  • 8-10 cups water
  • Salt to taste

Instructions:

  1. Prepare Vegetables:

In a large pot, heat the olive oil over medium heat. Add chopped onions, carrots, shallots, and celery. Sauté until the vegetables are softened and the onions are translucent.

2. Add Aromatic Ingredients:

Stir in minced garlic, grated ginger, turmeric, rosemary, thyme, and black peppercorns. Sauté for an additional two to three minutes to release the flavors.

3. Include Leafy Greens:

Add broccoli florets, spinach, and kale to the pot. Stir well until the greens are slightly wilted.

4. Pour in Water:

Pour eight to ten cups of water into the pot, depending on your desired broth concentration. Bring the mixture to a boil.

5. Simmer:

Once boiling, reduce the heat to low, cover the pot, and let the broth simmer for at least 30-45 minutes. This allows the flavors to meld.

6. Strain:

After simmering, strain the broth to remove solid particles. You can use a fine-mesh strainer or cheesecloth.

7. Season to Taste:

Add salt to taste. Remember that you can adjust the seasoning based on your preferences.

8. Cool and Store:

Allow the broth to cool before storing it in airtight containers. Refrigerate for immediate use or freeze for later.
