Roasted Honey Glazed Butternut Squash and Pomegranate Salsa

This recipe deliciously blends the caramelized flavors of butternut squash, the indulgent sweetness of honey, and the invigorating freshness of pomegranate. The honey-glazed squash with the pomegranate salsa harmonizes the roasted vegetables’ warmth, the fruits’ vivacity, and the subtle heat introduced by the jalapeño. Serves 6

Ingredients:

  • 1 Butternut Squash, halved
  • ¼ Cup Honey
  • 1 Red Onion, quartered
  • 2 Green Apples, sliced
  • 4 Green Tomatillos, sliced
  • 1-2 Jalapeño Peppers
  • 4 Cups of Pomegranate Seeds
  • ¼ Cup Fennel, finely chopped
  • 1 Lemon, juiced
  • Salt
  • Black Pepper
  • Olive Oil

Method for Squash:

  1. Preheat your oven: Preheat your oven to 400°F (200°C).
  2. Prepare the butternut squash: Cut the squash in half lengthwise and scoop out the seeds and pulp.
  3. Bake the butternut squash: Place squash, cut side up, in the oven for 15 minutes.
  4. Glaze with honey: Remove squash from the oven, glaze with honey, and bake for an additional 20 minutes or until the flesh is easily pierced with a fork and the edges are golden brown.
  5. Cut into wedges.

Method for Salsa:

  1. Roast the vegetables: On a sheet pan, roast the red onion, green apple, tomatillos, and jalapeños until they brown.
  2. Cool and dice: Set aside to cool, then dice the vegetables and add the pomegranate seeds.
  3. Mix well: Combine all ingredients well.
  4. Add the seasonings: Mix in the fennel, lemon juice, a dash of olive oil, salt, and pepper to taste.

Assembly:

  1. Plate the squash: Arrange the squash wedges skin down on a plate.
  2. Add salsa: Top each wedge with a scoop of your fresh Pomegranate Salsa.
  3. Versatile use: The salsa pairs well with fish, on tacos, or as a garnish for any roasted vegetable. Get creative and enjoy!
