Hands-On Cooking Classes with Cody Requejo

Cody Requejo

Sometime in the mid-80s, Chef Cody Requejo had his first sushi meal experience. What followed was an obsession that has turned into a full-fledged career for the past 3 decades. At 18, he quit a college culinary program and knocked on his favorite sushi joint’s backdoor hoping for an opportunity. An apprenticeship was offered and immediately he accepted. For several years he honed his skills, learned the ins and outs of Japanese restaurant culture, fish selection, and butchery, and eventually made his way behind the sushi bar. From there his career continued to grow, and in 2002 he opened his first restaurant, Tuna Town in downtown Huntington Beach, CA. There, he met Van Vu, who would later become his wife and business partner. In 2012, Chef Cody and Van invested in Roe Seafood and Fish Market in Long Beach, California, where Chef Cody’s passion for sustainable aquaculture began, as wild capture was expensive and difficult to source. In 2016, a new form of distribution was created that incorporated telling the story of sustainable aquaculture products coming out of Baja. Now, Chef Cody works for the Baja Kanpachi farm, Omega Azul, as their chef, brand ambassador, and sales strategist. He also recently opened FIISH in Culver City with his friend Chef Colin Whitbred. The pair share a passion for sushi, sustainable aquaculture, and sourcing local fish whenever they can.

Robin Asbell is the author of 11 cookbooks, and developed the recipes for #Eat Meat Less, for the Jane Goodall Institute in 2021. Her most recent cookbook is Vegan Meal Prep;  A 5-Week Plan with 125 Ready-to-Go Recipes ( Robert Rose).  Asbell brought the veg to the Minnesota Star Tribune with her Meatless Meals column for several years. Mat w/ Magic Circle (intermediate)

Using the Magic Circle to add resistance and intensity to your Classical Pilates Mat workout, you’ll:

Pilates with Odile Zelenak

Level 1 (9-9:45) Pilates Mat
Perfect for the Pilates beginner or working through a chronic injury. Feel challenged, strengthened and stretched while learning the Pilates fundamentals. You’ll deeply activate your entire body, especially your core, as Odile guides with clear cues and simple yet effective exercises. Each class offers a blend of contemporary and classical Pilates exercises to help you move and feel your best! This class is created with your Ranch week in mind. Level 2 (10am – 10:45am) Pilates classes
Be ready to bring the heat to this Pilates class! This class is ideal for you who already have a regular Pilates practice and are interested in spice things up! Grounded in the 7 Pilates principles, we play with props to bring the principles alive as we take our practice to the next level. This class is created with your Ranch week in mind. You can come every day in the progressive format or drop in and learn the lesson of the day.

Pelvic and low back strength through movement
You’ll learn tips, tools and techniques to give your pelvic floor, hips, abdominal muscles and low back the attention they need. Learn how to stretch tight muscles and strengthen your deep core  to create balance in this very powerful yet vulnerable area.

Shoulder girdle and upper back strength through movement
Upper body strength is so important. Be ready to move your upper body in all directions, challenge your shoulders, arms and upper back to increase strength, flexibility and stamina and reduce fatigue and poor posture due to weakness.

 

 

Odile Zelenak is a mastery movement specialist with certifications in Pilates, Gyrotonic®, Hendrickson Method® Orthopedic Massage, and Vinyasa Yoga. Her movement and massage practice are rooted in a deep passion and ongoing study of anatomy, with a strong focus on biomechanical and energetic alignment principles. Clients benefit from Odile’s skillful touch and extensive understanding of the body’s interconnectedness in an environment where overall health and wellness are achievable every day for everyone. Through continued work with Odile, clients learn habits and patterns that help them feel their best in their own bodies and develop lifelong self-care practices.

It is through her mastery skill set that she has helped clients reduce pain and find relief, develop joy and ease in movement, and regain strength and mobility.

Feldenkrais with Louise Chegwidden

Each of us has a unique way of going about learning, as babies, toddlers, adolescents, and adults. We engage with our world through our senses, prompting patterns of movement and thinking which may become habitual; challenging or limiting our intentions.

Louise guides you through a wide variety of gentle movement sequences, which allow you to attend to the senses, observe how you move, notice unnecessary effort and tension, and invoke new patterns with improved overall coordination and ease.

Louise invites laughter, curiosity, and compassion in her classes, promoting learning that lasts. Don’t be surprised if you feel lighter, or more grounded, breathe easier, and move more joyfully.

 

Louise Chegwidden, PT, GCFP, is a lifelong movement learner and educator. An avid swimmer, dancer, actor, and bicycle commuter, she inspires students to engage their embodied intelligence to reduce pain, and enhance graceful movement in all aspects of their lives. She practices the Feldenkrais Method in Oakland, CA, with individuals and in a weekly Awareness Through Movement class.

Louise wrote ‘Granny Gets a New Knee and a whole lot more,’ for anyone preparing for Knee Replacement surgery, or wanting to learn how to improve and maintain flexibility and mobility. With beautiful illustrations by Mokhtar Paki, this is a hands-on manual and practical guide.

Feldenkrais Classes: Louise guides you through a wide variety of gentle movement sequences, inviting you to observe through sensations, the qualities of your moving, the ‘hows’ of your moving. By noticing unnecessary effort and tension, abrupt or gradual initiation, breath holding, or jaw tightening, new patterns of improved overall coordination and ease can be invoked. Laughter, compassion, curiosity, and beginners’ mind are welcome.

Joey Altman is a San Francisco based Chef who wears many hats: Television Host, Cookbook Author, Restaurant Consultant, Food & Wine Educator, and Public Speaker.

Chef Altman’s culinary skills developed early – as a young boy he cooked at family parties and celebrations. Chef Altman attended the Hotel and Restaurant Management Program at Sullivan County Community College, and after graduation he left for France to train under some of France’s finest chefs, including Lyon’s Bernard Constantin and Jean Brouilly. Upon returning to the states, Altman worked at Harvest restaurant in Cambridge, Massachusetts, and later worked at Stars and other trend-setting San Francisco restaurants. In 1998 Altman launched Bay Café, a food-magazine television show that provides food and wine enthusiasts with an insider’s look at the Bay Area’s rich and diverse culinary scene. Bay Café has been recognized by the prestigious James Beard Foundation with the food-world’s equivalent to The Oscar’s, The James Beard Award for Best Local Cooking Series in 2000, 2001 and 2006. In addition to his Bay Café on KRON-TV, Altman appears at many benefits and food-related events in the Bay Area and nationwide.

Teitsa Mann’s passion for skincare products and treatments developed early, when she realized how easily her own skin scarred. Ben BrownBen Brown, MD, is Medical Director, for Ornish Lifestyle Medicine and an Associate Clinical Professor at University of California San Francisco. Ben has worked on lifestyle retreats with Dean Ornish, MD, since 1994. He has seen so many medical miracles with this powerful lifestyle medicine program that he was thrilled to become the Medical Director in 2014. The lifestyle program includes a plant based diet, relaxation, exercise and group support and has been scientifically proven to reverse coronary artery disease. Ben has more than 20 years in clinical medicine and has delivered more than 1000 babies. He has been a founding member for five non-profits and has spearheaded multiple community wide change projects. While in medical school he founded and directed an international non-profit (Community Partners International) to help serve the refugees along the Thai-Burma border and has done approximately 20 medical missions to the area and many missions to other areas (Bolivia, Haiti, Nicaragua). He worked as a rural family doctor in Point Reyes, California, and as Chief Medical Officer for Santa Rosa Community Health Centers. He teaches residents at the Santa Rosa Family Practice Residency where he developed an Integrative Medicine for the Underserved (IM4Us) Fellowship and started the IM4Us international movement (IM4Us.org). Ben is double boarded in Family Medicine and in Integrative Medicine, and has written and lectured extensively on reversing heart disease, physician wellbeing, facilitating life-style change and transformation. He is an award winning photographer, writer and humanitarian and is the author of 50 Simple Things to Save Your Life during Residency and is working on his next book, Know Yourself, Share Your Gifts, Master Change.
