Chef Janina Garay acquired her passion for cooking at a very young age learning from her grandmother over long leisurely preparations of family meals. Chef Janina received her degree in Culinary Arts, Administration and Service from Tijuana’s Culinary Art School in 2011. Shortly thereafter, she headed to Cantabria, Spain, joining 2 Michelin Star Cenador de Amos under Chef Jesus Sanchez, where she honed her skills. Upon her return, Chef Janina joined 1 Michelin Star Topolobampo with chef Rick Bayless, here she more fully developed her passion for Mexican gourmet pastry-making, which pulled her back to her origins at the US-Mexico border. Chef Janina was profoundly shaped and inspired during her time as Pastry Chef of Addison Del Mar, where, under Chef William Bradley, the restaurant was recognized as 5 Star Forbes Travel Guide, AAA 5 Diamond Restaurant, and, most recently, as Southern California’s only 3 Michelin star restaurant.

Chef Janina came home to Tijuana to experiment with the vast array of binational flavors, the culture and culinary shock which transpires in Tijuana with the arrival and addition of new cultures – Korean, Haitian, Ethiopian and more! Chef Nina is currently Culinary Director of the Be Saha Restaurant Group in Southern California and Baja California Norte, heading over 8 projects including The Guild Hotel and Wormwood in San Diego, Tahona in Valle de Guadalupe and San Diego and is dedicated to expanding the multicultural Calibaja culinary art scene.

Be Quiet, Be Heard

Hidden Communication: Why People Hear What We Don’t Say
A world of communication lurks below the surface of our awareness. When we are in conflict, this hidden dimension often catapults us into confusion and mind-bending emotion, thwarting creative resolution and conscious action. Drs. Glaser are former actors as well as award-winning researchers and university professors. They dramatize compelling conflict scenarios to demonstrate what happens when conflict invades our world and how to master seemingly deadlocked moments in challenging business, family, and personal situations.

Power Listening
When interpersonal pressure is on, listening is too often the first casualty. When dialogue turns to criticism, we often revert to unconscious auto-pilot reactions with defensive responses that may damage the relationship and make problems worse. This session provides a five-step model for transforming defensiveness and blame into insight and agreement. Speakers dramatize how trust increases when each person feels heard and understood.

Navigating Challenging Conversations
Why it is that people we care about too often feel defensive when we try to convey suggestions for improving their behavior and our relationship? How can we stop torpedoing our efforts and instead transform conflict into cooperation, discord into harmony, and make good relationships even better? This presentation provides a four-step model for raising issues that renders remarkable results: solving the problem, strengthening the relationship, and deepening trust – without creating a negative reaction.

Peter A. Glaser, Ph.D. and Susan R. Glaser, Ph.D. received their doctorates in Communication from the Pennsylvania State University. Their BreakThrough Communication series won the Gold Award for best hybrid learning of 2022 from the International E-Learning Association. Authors of the internationally acclaimed book, Be Quiet, Be Heard: The Paradox of Persuasion, they have been married business partners and co-presenters for their entire career. Drs. Glaser have published three books and more than 40 research articles. Their research on transforming organizational culture has received the International Association of Business Communication Research Foundation Award for bridging communication theory with practical application. They also received the Pennsylvania State University Outstanding Alumni Award. Feature stories have been written about their work in Business Week, Fast Company, Psychology Today, Newsday, Nation’s Business, National Business Review, Working Woman, Success Magazine, and the Washington Post. The Glasers have served as members of the University of Oregon faculty as well as global consultants working with leaders from Fortune 100 companies such as Microsoft, Hewlett Packard, Facebook, Tektronix, Hyundai, and Sony Corporation. They have worked with leaders and companies throughout the UK, Canada, India, Sri Lanka, Singapore, Malaysia, Indonesia, Philippines, Thailand, Hong Kong, Australia, and New Zealand. They also have worked with federal, state, and local government leaders – including their ongoing work with the US Congress.

Qigong and Tai Chi: Eastern Practices for a Healthy Life and Stress Reduction

Qigong and Tai Chi for Healthy Living
All the movements I will be teaching in these classes are slow and gentle, and are accessible to beginners as well as those who may be familiar with Qigong. Studies have shown these to be effective practices for increasing flexibility, muscle strength, lung capacity and cardiac function. Both Tai Chi and Qigong have additional health benefits for relaxation, balance, posture and immunity. The stress-relieving factor alone can better your lifestyle and your quality of life.

1- Tai Chi/Qigong samplerThis sampler class will focus on giving participants a varied sampling of Qigong from both active and passive forms. Participants will learn movements to help detoxify the body, make healing sounds for the different organs, and learn beginning movements of Sun style Tai Chi.

2- Tai Chi for health – Tai Chi is one of the best-known martial arts of the internal styles from Ancient China. The essential principles of Tai Chi are based on the ancient Chinese philosophy of Taoism, which stresses the natural balance in all things and the need for living in spiritual and physical accord with the patterns in nature. Based on Qigong and martial art techniques from thousands of years ago, Sun style is the youngest of the major styles. This program will follow a 3- fold format: warm-up, Tai Chi practice and winding down.

3- Qigong Flow forms to reduce stress – For a relaxing and restorative program, we begin with a cleansing warm-up, individual practices that include Yin Yang Medical Qigong and Eight Pieces of Brocade to conclude with self-massage. The warm up will include Whole Body Breathing which is effortless and tranquil, focusing on the breath. Swimming Dragon Qigong is also included as an energy exercise from China which imitates the serpent-like movement of a dragon coiling its body. It’s known to help normalize the metabolism, increase spinal flexibility, and reduce stress by harmonizing mind, body and breath.

4- Walking and Seated Qigong forms for balance and longevity – Experience an assortment of exercises which begin with a warm up and posture integration, and follow with different walking forms, Animal Frolics, seated healing sounds and seated Fragrance Qigong. The Animal Frolics are part of the traditional Animal Frolic Qigong set and the Orca animal frolic portion was created by Ken Cohen. The Six Healing Sounds exercise is taken from Mantak Chia. Its purpose is to clear blockages in the major organ systems.

5- Seasonal Qigong for enhanced health and well- being – In Traditional Chinese Medicine, the kidneys are associated with the season of Winter and the element of Water. Our kidneys share the energy of Water, which means that when it gets cold in the winter, water freezes. So, we pay extra attention to our kidneys to keep their energy moving, flowing, just like a stream. The kidneys must be protected and nourished, especially during the Winter.  Bone Marrow Cleansing is a wonderfully effective four movement exercise for cleansing the bones, (which are governed by the Kidney energy system) by integrating the mind’s intent with physical postures. Standing and walking Bear Animal Frolics, Seasonal Winter sets and acupuncture points for the kidneys will also be included.
