Hands-On Cooking Classes and a Mexican-Italian Culinary Journey with Palma Bellinghieri

Palma offers hands-on culinary experiences, 3.5 hours each, during which you will enjoy preparing your own meal along with fellow cooks. Classes take place at La Cocina Que Canta, our culinary center on Tuesday and Wednesday, at 4pm. In addition, Chef Palma will collaborate with La Cocina Que Canta’s Head Chef, Vivian Mercado, and her team to create a special feast (with wine pairing!) on Thursday at 4:45pm.

Thursday Dal Campo alla Tavola: A Mexican-Italian Culinary Journey Dinner 4:45 PM

Palma Bellinghieri is a second-generation culinary artist and chef. Born in Mexico City, she is a graduate of the Pierrefeux Institute and Glion Hotel Management School in Montreaux, Switzerland. A founding member of the Mind/Body Health Initiative, daughter of world-renown Sicilian chef and restaurateur, Alfredo Bellinghieri (“Alfredos” and “La Trucha Vagabunda” restaurants in Mexico City), Palma fuses generations of family and Bellinghieri-restaurant recipes and upbringing into nutritious and delicious foods. Palma has been a Demonstration Chef at the Vegetarian Cooking School of the Scripps Center for Integrative Medicine, assuring us that thoughtful food choices can be made, leading to prevention and reversal of many chronic conditions. Palma also caters delicious healthy food for special events and parties.

For the last 18 years during the summer months, she directs and teaches the popular camp series “For Young Chef’s,” teaching healthy eating, food preparation and cooking to children and teens with recipes and culture from Around the World!

For the past three years, Palma has been immersed taking over Hotel Las Palmas Hotel in San Felipe, Baja California, where her parents spent the last 30 years of their life. As a result, she has remodeled Alfredo’s Restaurant & Bar and has redesigned the gardens and 45 rooms in the hotel to create a culinary and hospitality legacy. Las Palmas is in the Sea of Cortez, a retirement community only 4:30 hours from San Diego, with warm beaches and fresh local produce.

Maylin Chávez is a native to Tijuana, Baja California Norte and a Rancho la Puerta Alum. Maylin brings her heritage and passion for the sea to each dish she prepares. Her personal and professional experiences cooking in Baja, and around the country while being surrounded by the rich diversity of ingredients has created a direct imprint on her cuisine. “My approach to oyster and seafood cookery is to surprise the senses, and bring a mélange of globally inspired flavors to each bite you enjoy.”

Maylin moved to Portland, Oregon in 2014 to open her first restaurant where Oysters took center stage and the Bounty of the PNW met the flavors of her hometown of Baja.

Her cuisine and restaurant have been featured in Bon Appetite Magazine September 2016 issue, Best New Restaurants, Eater’s 38 hot list, Sunset Magazine, Food Networks Best Oyster Bars in America, Northwest Travel & Life, Wine and Spirits Magazine and many more.

Maylin has also appeared on the Food Network, Guy’s Grocery Games, and Chopped.

Olympia Oyster Bar on N Mississippi Ave in Portland shut its doors in 2020. However, Maylin has been hosting a series of pop-ups throughout Oregon under her new venture Nácar. Most recently she is also the Executive Brand chef for Blue Evolution Seaweed .

Session 3: The Neurobiology of the Relational Brain: I will introduce you to the “adaptive child” and “wise adult” parts of the brain and free you to see where you go when you get triggered and why.

Session 4: Five Winning Strategies: Five winning strategies enhance intimacy and connection. Here we will explore how to get needs met by empowering your partner (whether mother, adult, child, co-worker, friend) to give you what you need.

Session 5: Listener/Speaker Roles and the Feedback Wheel: Learn how to be a good listener and good speaker and how to use the “feedback wheel” as essential skills for better communication and connection.

Embodied Self-Compassion with Julie Kangas

Life has pain. Despite your best intentions, things go wrong. How do you usually react when things fall apart? Often, people feel ashamed and self-critical, thinking “What’s wrong with me?” No matter how hard you try to avoid emotional pain, it’s everywhere. Can you make a change and learn to respond to pain differently? Instead of thinking that you are broken and need to be fixed, these sessions teach how to relate to emotional pain in a more compassionate and loving way. This series will explore a radical, scientifically supported way to respond to pain: through self-compassion.

Defining Self-Compassion.
Simply put, self-compassion is taking care of yourself, just as you would care for someone you love dearly. In this session, we will explore the three parts of self-compassion: mindfulness, common humanity, and self-kindness. We will apply this lesson through compassionate emotion surfing.

Session 2: Experiencing Self-Love. In this session, you will enjoy experiential practices of affectionate breathing, compassionate self-touch, and gratitude for yourself. We will explore the reality of the negativity brain bias and over-ride that tendency with self-appreciation.

Session 3: The Yin and Yang of Self-Compassion. Is self-compassion always just a fluffy, touchy-feeling practice? Not at all! There is a fearsome side! This session focuses on the two sides of self-compassion, emphasizing the yin (comforting, soothing, validating) and yang (protecting, providing, motivating).

Session 4: Nonjudgmental Acceptance. “What you resist persists. What you feel can heal.” When you hate, resist, and judge yourself, you get stuck. This session explores how to befriend yourself, just as you are. We examine the inner critic and replace it with a compassionate coach.

Session 5: Embracing your Body with Self-Compassion. Your sense of self is often closely identified with your body, and it can be painful when your body doesn’t look, behave, or feel the way you want. In this final session, we will apply our core strategies of non-judgmental mindfulness, common humanity, and self-kindness – specifically toward your body.

 

Julie Kangas, Ph.D. is a licensed clinical psychologist, certified yoga teacher, and a certified compassion meditation teacher. She is an Associate Clinical Professor at the University of California, San Diego and a clinic coordinator at the San Diego VA. She treats Veterans with PTSD and participates in research applying yoga, self-compassion, and meditation as treatments for mental and physical illness. She serves as the Director of the Advanced Fellowship for Women’s Health and teaches doctoral and post-doctoral candidates in clinical psychology.
